Fruit cooking and mixing unit for viscous products such as fruit jams. The installation consists of a stainless steel (SS) support framework with working platform and stairs, a mixing and cooking tank, a trolley/bin elevator for loading including safety fencing, two standard norm trolleys, one norm trolley with a built-on mixer, a balance vessel with pump, a control panel, a swing bend panel, and all related valves and piping. The line was previously used to produce red berry compote.
The system includes a Steiner mix tank, which is double-jacketed and insulated, and equipped with a centrally mounted scraper agitator. The motor specifications are 1.5 kW, 3.6 A, 2,860 rpm, with an output speed (n₂) of 10 rpm at 50 Hz. The agitator provides full-surface scraping coverage along the vessel walls by means of spring-loaded PTFE (Teflon) scrapers. Stirring speed is adjustable via a Danfoss frequency converter, and both stirring time and interval can be set as required.
Heating is performed using saturated steam, either through the jacket or via direct steam injection. The tank is fitted with four steam injection ports, two located at the front and two at the rear. An Endress+Hauser temperature sensor is installed to monitor the filling temperature. For water dosing, the unit is equipped with a Diesel flow meter including a control valve.
The trolley/bin elevator has a maximum capacity of 300 kg and can be operated both from floor level and from the working platform. A top position sensor is installed for controlled operation. The elevator is surrounded by stainless steel safety fencing and includes an access door fitted with a safety sensor. Additionally, a height-adjustable trolley mixer is included, equipped with an agitator for dissolving applications. The trolley has a capacity of 200 litres and is mobile, featuring lifting strips for easy handling.
